Ingredients 

  • 1 large whole-wheat pita bread or pocket
  • 2 tbs tomato paste 
  • 5 &1/2 oz mozzarella sliced or grated 
  • 1/2 red onion very thinly sliced 
  • 3 &1/2 oz butternut squash very thinly sliced or shaved 
  • 2 tsp pine nuts 
  • 2 fresh marjoram salt and pepper to taste 
  • 1 cup arugula

Methods

  • Preheat oven and pizza tray or stone to 430 F.
  • Spread tomato paste evenly over pita and top with mozzarella, onion, squash, pine nuts, and marjoram—season with salt and pepper.
  • Bake 10-15 minutes, until golden.
  • Top with arugula to serve.
