- 1 large whole-wheat pita bread or pocket
- 2 tbs tomato paste
- 5 &1/2 oz mozzarella sliced or grated
- 1/2 red onion very thinly sliced
- 3 &1/2 oz butternut squash very thinly sliced or shaved
- 2 tsp pine nuts
- 2 fresh marjoram salt and pepper to taste
- 1 cup arugula
- Preheat oven and pizza tray or stone to 430 F.
- Spread tomato paste evenly over pita and top with mozzarella, onion, squash, pine nuts, and marjoram—season with salt and pepper.
- Bake 10-15 minutes, until golden.
- Top with arugula to serve.
