Ingredients 

  • 1 lb 1 oz skinless chicken thighs roughly chopped 
  • One can of chickpeas drained & rinsed 
  • 1/2 cup white quinoa rinsed 
  • One onion chopped 
  • Two garlic cloves finely minced 
  • 5 oz sweet potatoes diced 
  • One and a half cups chicken stock
  • One can of diced tomatoes 
  • Two tbs white wine vinegar
  • One tbs tomato paste 
  • 1/4 cup golden raisins 
  • 2 tsp ground cumin
  • 2tsp ground cinnamon 
  • Salt & pepper, to taste 
  • 1/2 bunch of fresh cilantro
  • Chopped, plus extra to serve 

Methods 

  • Combine ingredients in a slow cooker, cook on high flame for 3-4 hours (or on low for 6-8Hours) or until chicken is cooked and the sauce has thickened.
  • Check seasoning and divide between bowls, scatter over reserved cilantro leaves to serve.
